Pandesal

Traditional Filipino bread rolls.

Ingredients

  • 2 tbsp butter (1/4 stick)

  • 1 egg

  • 1/3 cup white sugar

  • 1 cup lukewarm water

  • 1 tsp instant yeast

  • 3 cups bread flour

  • 1/2 tsp salt

  • Bread crumbs (optional, but traditional)


Steps

Mix & knead ingredients

  1. Cut butter into thin slices and line in the bottom of a mixing bowl

  2. Add the egg to the bowl. Beat and smash the egg into the butter slices

  3. Mix in sugar completely

  4. Mix in lukewarm water

  5. Stir in yeast, then flour, then salt

  6. Knead the dough by hand for about a minute

  7. Form into a ball

  8. Leave in the bowl and cover with plastic wrap

1st rise

  1. Place the bowl on the counter at room temperature (70° F or above), or in oven with the oven light on, until doubled in size (usually about an hour to an hour and a half) 

  2. Move the covered bowl to the refrigerator and leave in from 4 to 24 hours

Shaping & 2nd rise

  1. Remove dough from refrigerator, shape into a log

  2. Cut the log into thirds, then each piece into quarters (you should have 12 pieces; math)

  3. Roll the pieces into balls

  4. [Optional] Roll the balls in a bowl of bread crumbs to lightly coat

  5. Place the balls on a parchment lined baking sheet about a half inch apart and cover with a cloth towel

  6. Leave the baking sheet on the counter at room temperature (70° F or above), or in oven with the oven light on, for about 3 hours

Bake

  1. Preheat oven to 350° F

  2. Remove the towel (duh)

  3. [Optional] Just before placing into the oven, using water in a spray bottle, lightly mist the dough and the inside of the oven

  4. Bake for about 17 minutes, or until golden brown
